Really, when you've tasted it, there's no better meat than "chigüiro", or "capybara", as it's known with English- and Dutch speakers.



The biggest extant rodent, native to South America only.

Great meat, nicely BBQ'd and priced at less than £3/€3 for a full meal.

The Blonde Buttermaker (what a nice name) is American and to many Americans
European countries are all the same, perhaps? ;)

Of course Goulash (German: Gulasch) is Hungarian: en.wikipedia.org/wiki/Goulash

When I make a German Gulasch :) I am first searing A LOT of onions, because

1. they are the ingredients that give the Gulasch the delicious roasted taste (besides the meat)
2. they make the gravy thick and smooth (I don't like to add flour) when cooked in the broth for an
hour or more, so that the meat will become soft as butter, as we say

and I never added peas. Peas are just NOT the usual ingredient of a German Gulasch as I know it.
Instead I add diced sweet peppers about 20 minutes before the end of the cooking time, to add some
vitamines and I like vegetable with the meat.

Instead of bone broth I use vegetable broth and besides a lot of paprika powder and tomato paste I add
a pinch of chilly powder (Gulasch must be hot!), freshly pestled cardamom and coriander seeds, because
I like their taste very much, but these are not the typical spices for German Gulasch.

I cook washed potatoes seperately and with the peel, because this way they don't lose vitamines
and keep their typical earthy taste.

All ingredients I use are organic and Gulasch tastes even better when you cook it a day before you want to serve it.

Forelle Müllerin - Trout meunière


with potatoes and butter sauce :)


Meunière refers to both a sauce and a method of preparation, primarily for fish. The French word meunière itself means "miller's wife", "nach Müllerin Art" (as the miller's wife cooks it) or short "Müllerin" in German, who, acccording to folk lore, cooked everything coated with flour.

The trout is seasoned and floured, sautéd in butter, and then topped with the browned butter from the pan.

Serve with potatoes, chopped parsley, and lemon.

This is a healthy, delicious, unelaborate and rustic dish.

I only did eiernockerl once and didnt have chives to hand. I used to have spatzle regularly with meat stews. Here is a basic recipe but you could add bacon and or cheese to.

quantities would be for about 3 people or 2 hungry people. I use a spoon to form the dumplings rather than a board, could also use a spatzle hobel

Seidenköpfchen (lit.: little silk heads) seem to be a smaller version of www.dict.cc/?s=Seidenkopf

I lately bought some organic Seidenköpfchen and today transformed ;) them into a delicious meal as follows:


sear diced bacon in coconut oil

then add

half a diced onion or more

then add the roughly chopped Seidenköpfchen (or other fresh mushrooms) and cook for a few minutes
before you add half a cup of water or more, depends on how much sauce you want to have, then thicken
the sauce with organic carob bean gum (Johannisbrotkernmehl), stir in one or two tablespoons of sour cream,
season to your taste, sprinkle with minced parsley and a few drops of fresh organic lemon juice - et voilà -
you have a delicious and easy to make dish.

I prefer to have it with mashed potatoes, but rice, noodles or simply potatoes are also yum-yum.

Easy-peasy, very delicious recipe of which I could eat tons:

- Strawberries
- Good quality (full) yoghurt
- Sugar (preferably caster sugar)

Cut strawberries in half --> put in bowl --> add yoghurt --> add some caster sugar --> mix.

When I was a child my mother often prepared a cold lunch on hot summer days which
consisted of strawberries, cold milk and a slice of bread and butter going with it.

We hardly used sugar on them, because at that time strawberries were sweet enough
from growing naturally in our garden with lots of sun when summers were still summers.

Today you hardly get ripe and sweet strawberries that taste like strawberries, thus you
need to add some kind of natural sweetener, like honey, stevia, xylitol/birch sugar ...
as caster sugar kills vitamin C.

What we do is wait for a day or 2 after buying the strawberries so they can ripe a bit more, and then they are excellent.

Even better would be to buy them directly at a farm where they come straight off the land ofc.

This year we had lots of these cherries coming straight from the Dutch Betuwe which were incredible:



P.S. Yoghurt tends to be very sour, so I add some caster sugar to sweeten it up a bit. Hitler would have given his approval for that.
